Should a handyman business focus on small quick jobs or scale up to larger renovation projects?

On bigger jobs I always take a deposit upfront to cover materials then set it up with the customer to get a weekly draw agianst the rest of the amount I charged for the job. My customers have always been happy to write a check every week. Then a final check for any amount due at the end of the job.
