Here is what I do....
Short Term: consider technology &/or SOP's to make you more efficient so you can handle more volume
Short Term: determine what is repetitive that can be handed off to someone else
Short Term: It was commented already, consider 1099 help to fill gaps and save taxes, benefits, WC costs, equipment etc.
Short Term: if you aren't operating on block scheduling, organize your day to be more efficient in completing the most important tasks first
* Commonly entrepreneurs use their spouse or significant other to handle officework/scheduling etcetera to take a bit of the burden off. additionally, unrelated, check with your CPA but once you get two stable employees, you should be able to start filing business taxes as S-CORP and take bonus checks that are NOT taxed as income. Also offer company match IRA's and other tax benefits for you down the road.
NEXT: ideally build out training SOP's and newhire packets with advertisements for positions (if you are too busy, refer to short term options above and work on it over the slower seasons). Emotionally, understand that it is a numbers game. In construction, the average company interviews 75-100+ people before they can get 1 to stick beyond 12 months. As you grow, you (or someone else in the company) may need to block schedule time every week to run interviews. Just make sure you have a written employee agreement with clarity of the position and the company they are interviewing with.
Identify the floor and the ceiling of the ideal person in the position available and start networking where those people are. Trade Schools, Give business presentations/guest speaking at high schools, job fairs, etc.
Highlight the best and worst parts of the job and be up front so people can identify with it, or shut it down immediately.
Regarding job postings, If you don't know where to start, see what other people are doing for their postings and copy what you like until you taylor it to your company and positions.
For a look at scale, With my last employer, I had 26 people in my department and 100+ in the company. I did round 1 interviews at 50 per week (scheduled 4 per 30 minute block and 1-2 would show on average)Scheduled 5 days a week for 2.5 hrs and when they didn't show, I got a lot more office work done :-)
